Three Refreshing Mocktails

Here’s a few refreshing mocktail recipes to help you handle the heat.

FAUX-MOJITO

Time: 10 minutes

Serves: 1 drink

Ingredients:

  • 3-4 fresh raspberries
  • 5-6 mint leaves
  • ¼ cup cranberry juice
  • 2 tbsp fresh lime juice
  • ½ cup soda water
  • 1 cup white sugar
  • 1 cup boiling water

To make the sugar syrup, dissolve the sugar and boiling water in a bowl and let it cool.

In a tall glass, muddle the raspberries, mint leaves and 2 tbsp of the sugar syrup.

Fill the glass with ice. Add cranberry juice, lime juice and soda water. 

Garnish with a lime wedge and cheers!


ICED GINGER TEA

Time: 10 minutes

Serves: 4 drinks

Ingredients:

  • 8 cups water
  • 8 green tea bags
  • 4cm knob fresh ginger, peeled and diced finely
  • 1 lemon and/or lime, sliced
  • Sprig of mint for garnish

Boil the water in a saucepan. Remove from heat and add the minced ginger and tea bags. Steep tea for up to three minutes. 

Remove tea bags and strain the tea into a tall jug.

Refrigerate until cold and serve with a natural sweetener such Stevia or sugar syrup (see previous recipe). 

Add lemon or lime slices and garnish with mint.


WATERMELON AND BASIL COOLER

Time: 10 minutes

Serves: 4 drinks

Ingredients:

  • 1 watermelon
  • 5-6 fresh basil leaves
  • Juice of ½ lime

Chop the watermelon and remove any seeds. Place in a blender with the basil leaves and lime juice.

Serve cold over plenty of ice. Sweeten with a dash of sugar syrup, if required.
